Stuffed Baked Potatoes
Stuffed Baked Potatoes is an moderately easy dinner. Made with 6 slices bacon, 6 large baking potatoes, 2 scallions, 1/4 c. parsley and 8 oz. sour cream, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cook bacon and set aside for garnish.
Bake potatoes until tender.
Remove from oven and cool.
Chop scallions.
When potatoes have cooled, hollow out potato from the top.
Put pulp, scallions, parsley, sour cream, mayonnaise, butter, salt, pepper and Parmesan cheese in a bowl and mix until creamy.
Spoon into potato skins and add cheese and bacon.
Bake in oven at 325Β° for 20 minutes.
