Stuffed Baked Potatoes
Stuffed Baked Potatoes is an moderately easy dinner. Made with 8 medium-size potatoes, 1 egg, 1 c. sour cream, 2 tbsp. chives (dried, frozen or fresh) and salt to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Bake potatoes in 350° oven for 1 hour or until done.
Cut in half lengthwise and scoop out inside.
With mixer, whip potatoes and add sour cream.
Then add egg, chives and salt to taste.
Let cool and last, add cheese.
Fill halves with potato mixture and sprinkle with paprika.
Bake at 350° for 20 minutes or put in plastic freezer bags and freeze for later use. (These freeze beautifully!)
