Scrub potatoes; place on oven rack.
Bake at 425° for 1 hour. Remove from oven.
Reduce temperature to 400°.
Split potatoes in half lengthwise.

Re-fill potato shells and sprinkle with Cheddar cheese.
Place on baking sheet and return to oven for 15 minutes.
