Stuffed Acorn Squash
Stuffed Acorn Squash is an moderately easy dinner. Made with 1 small acorn squash, 6 oz. lean pork, 1/4 c. chopped celery, 1/4 c. chopped onion and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cut squash in half, remove seeds and bake cut-side down at 350Β° for 50 minutes.
In skillet, cook pork, celery and onion until meat is no longer pink and vegetables are tender.
Drain fat.
Stir in salt, curry powder and cinnamon.
Cook 1 minute more.
Stir in applesauce and bread cubes.
Place stuffing in squash halves; bake uncovered 20 minutes more.
Makes 2 servings.
