Strawberry Soup
Strawberry Soup is an moderately easy dinner. Made with 3 pt. fresh strawberries, 1 c. orange juice, 1 1/4 tsp. instant tapioca, 1/8 tsp. cinnamon and dash of nutmeg, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Slice 6 strawberries and reserve.
PurΓ©e remaining berries in processor or blender.
Strain into 4-quart saucepan.
Add orange juice.
In small bowl, mix tapioca with 4 tablespoons pureed berry mixture.
Add to saucepan with cinnamon and nutmeg.
Heat, stirring constantly, until comes to a boil. Cook 1 minute at medium heat or until thick. Remove from heat.
Pour into large bowl. Add sugar, lemon peel and juice and buttermilk. Blend well. Fold in sliced berries. Cover and chill at least 8 hours. Serve with lemon garnish. Can be prepared 3 days ahead.
