Stilton Soup
Stilton Soup is an moderately easy dinner. Made with 2 oz. unsalted butter, 1 onion, finely chopped, 2 celery sticks, chopped, 4 tbsp. flour and 3 tbsp. dry white wine, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Melt butter in saucepan, add onion and celery and fry gently for 5 minutes.
Stir in flour and cook for 1 minute.
Remove from heat, stir in wine and stock, return to heat, bring to boil and simmer 30 minutes.
Add milk and cheeses, stirring constantly; season to taste.
PurΓ©e in blender and reheat without boiling. Stir in cream and serve with or without croutons.
