Squirrel Stew
Squirrel Stew is an impressive dinner. Made with 2 squirrels, cleaned, of course!, water, 1 large onion, quartered, 2 stalks celery and potatoes, diced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Put squirrels in large pot; cover with water.
Add 1 teaspoon salt, pepper, onion and celery.
Cook 1 to 2 hours.
Remove squirrel.
Strain broth; discard onion and celery.
Put broth back in pan; add bay leaf and 2 teaspoons salt.
Add all other ingredients.
Remove squirrel meat from bones and cut into bite size pieces.
Add to stew.
Cook 2 hours.
(Remove bay leaf before serving.)
