Preheat oven to 350Β°. Prepare stuffing mix according to directions, except reduce water to 1/4 cup.
Spread half of stuffing in a 2-quart baking dish.
In a large saucepan, cook squash and carrot in a small amount of water 8 to 10 minutes, until tender.
Stir in soup, sour cream, onion and 1/4 teaspoon black pepper.
Spoon mixture over stuffing; top with remaining stuffing.
Bake 35 to 40 minutes, until thoroughly heated.
