Squash Casserole
Squash Casserole is an moderately easy dinner. Made with about 2 1/2 to 3 lb. squash, salt and pepper, 1 tbsp. oleo, 1/2 c. chopped onion and 1/4 c. chopped bell pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook squash until tender; drain.
Add salt and pepper and oleo; mash and cool.
Mix remaining ingredients well; add to squash.
Mix in about 1 cup Velveeta cheese (cut into cubes).
Spoon into greased or buttered casserole dish.
Top with cracker crumbs and bake until brown and bubbly.
