Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 4 c. diced yellow squash, 2 tbsp. grated onion, 2/3 c. grated carrots, 1 can cream of chicken soup and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook squash in 1 1/2 cups water to which 3/4 teaspoon salt has been added, for about 10 minutes.
Drain and add next 4 ingredients and pepper to taste.
Butter a baking dish and put 1 cup stuffing in the bottom.
Add squash mixture.
Top with remaining stuffing and dot with butter.
Sprinkle with almonds, if desired.
Bake at 350Β° for 30 minutes.
