Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash, 1 medium onion, chopped, 1 c. milk, 4 eggs, separated and 1 c. sharp grated cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil squash and onion in a small amount of water until tender. Drain well.
Purée in blender until smooth.
Add additional ingredients except egg whites.
Whip egg whites until stiff.
Fold into squash mixture.
Cover with bread crumbs and dot with butter.
Place in a 2-quart casserole and bake 25 to 30 minutes at 350°.
