Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced (6 c.), 1/4 c. chopped onion, 1 can condensed cream of chicken soup, 1/2 c. sour cream and 1 (8 oz.) pkg. herb seasoned stuffing mix, this recipe delivers authentic, satisfying flavors. In saucepan, cook squash and onion in boiling water (salted) for 5 minutes; drained.
Combine soup and sour cream.
Fold in drained squash and onion.
Combine stuffing mix and melted margarine.
Spread half of stuffing mixture in bottom of 12 x 7 1/2 x 2-inch baking dish.
Spoon squash mixture on top.
Sprinkle remaining stuffing over this.
Bake at 350Β° for 25 to 30 minutes or until heated through.
