Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash or 3 cans squash, 1 c. cream of mushroom soup, 1 medium onion, chopped, salt and pepper to taste and 1 stick butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook sliced squash, onion, salt and pepper until tender.
Brown stuffing in butter.
Oil a 2 1/2-quart baking dish with 1/2 of stuffing.
Drain squash and add cream of mushroom soup.
Stir well and layer over stuffing in baking dish.
Put sliced pimento on top. Add sour cream as next layer.
Top dish with remainder of stuffing. Bake uncovered at 350Β° for 30 to 40 minutes.
Serves 8.
