Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 1 qt. sliced squash (cooked & drained), 1/2 c. medium cheddar cheese, 1/2 c. minced onions, 1 1/2 c. crushed crackers (ritz) and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Put squash in large casserole dish & mash.
Add cheese leaving enough to cover later.
Stir in crackers & minced onions. Add eggs & stir quickly to prevent them from cooking.
Salt & pepper to taste.
Cover with rest of cheddar cheese.
Cook at 350 degrees for 20 minutes.
Uncover and cook an additional 20 minutes or until slightly brown.
