Squash Casserole 2
Squash Casserole 2 is an moderately easy dinner. Made with 2 to 3 c. cooked squash, 1 egg, slightly beaten, 1/2 stick margarine, sliced, 1/2 c. mayonnaise and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Put well drained, hot squash in large mixing bowl.
Add egg, margarine, mayonnaise, sugar, half of cheese and half of cracker crumbs.
Season with cayenne pepper, salt, pepper and herbs (oregano is especially good in this dish).
Mix all ingredients well.
Put into buttered 1 1/2-quart casserole and top with remaining cheese and crumbs.
Bake at 350Β° for 20 minutes. Crookneck squash or a mixture of crookneck and zucchini may be used.
