Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. zucchini, chopped, 1 medium onion, sliced, 3 tbsp. butter, 3 eggs, beaten and 1 (10 3/4 oz.) can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 350°.
Boil zucchini and onion together, then drain.
Combine butter, eggs, cream of mushroom soup, salt and pepper.
Mix in zucchini and onion.
Pour into 1 1/2-quart buttered casserole dish.
Mix together bread crumbs and Parmesan cheese. Sprinkle crumb mixture over zucchini casserole.
Bake 30 to 40 minutes at 350°.
