Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. cooked squash, drained and mashed, 2 medium carrots, grated coarsely, 1 can cream of chicken soup, 1 onion, chopped fine and 1 small jar pimento, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Melt margarine; mix with dressing.
Put all but 1 cup of dressing in bottom of an 8 x 11-inch baking dish.
Mix the squash, carrots, soup, onion, pimento and sour cream; pour over dressing. Top casserole with reserved dressing.
Bake at 350Β° until casserole is hot and bubbly.
Will serve 10 to 12.
