Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. fresh squash, 1 large onion, 1 green bell pepper, 2 eggs and 1/4 c. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook squash, onion and bell pepper until tender, drain well. Mash and add margarine and cheese or cheese soup, stir until cheese melts.
Mix milk and eggs.
Add to squash.
Mix well, then add crushed saltines.
Pour into casserole dish and bake at 350Β° for 25 to 30 minutes or until lightly brown.
