Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced, salt and pepper to taste, 1 can cream of chicken soup, undiluted, 1 (2 oz.) jar diced pimentos, drained and 2 carrots, grated, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook squash in small amount of boiling water until tender; drain well and mash.
Add salt and pepper.
Combine soup, pimentos, carrots, onion, sour cream and butter, blending well.
Add squash and mix thoroughly.
Line a greased casserole dish with half the stuffing mix.
Spoon squash mix over the stuffing.
Cover with remaining stuffing.
Bake at 350Β° for 40 minutes or until bubbly.
