Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced, 1/4 c. chopped onion, 1 can cream of mushroom or cream of chicken soup, 1 c. sour cream and 1 c. shredded carrot, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil squash and onion for 5 minutes and drain.
Combine soup and sour cream.
Stir in carrots.
Fold in squash and onion. Combine stuffing and margarine.
Put 1/2 stuffing in bottom; spoon in squash mixture and top with rest of stuffing.
Bake at 350Β° for 25 to 30 minutes.
Serves 6 to 8.
