Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 1/2 lb. yellow squash, 1/2 c. oleo, 3/4 c. chopped onion, 2 eggs, beaten and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Slice and cook squash until tender; drain well.
Saute onion in oleo.
Mix with squash.
Add crumbled Ritz crackers, eggs, seasonings and cheese.
Put this into baking dish.
Mix oleo and cracker crumbs; put over top of squash.
Bake at 350Β° for 35 minutes.
Serves 8.
