Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 c. fresh or frozen squash, 1 large onion, chopped, 1 pkg. crumbled cheese crackers (i use ritz), 1/4 c. melted butter and 1 c. grated cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook squash and onion until tender; drain and mash.
Beat together eggs and milk; add to squash.
Mix cheese, oleo and cracker crumbs.
Add 1/2 of this to casserole mixture.
Put into buttered casserole and top with remaining crumb mixture.
Bake at 400Β° for 20 to 30 minutes.
