Spud Delight is an moderately easy dinner. Made with 8 c. diced, cooked potatoes (about 6 large), 2 tsp. salt, 2 c. cottage cheese, 1 c. dairy sour cream and 1/4 c. minced onion, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
Sprinkle potatoes with salt.
In a separate bowl, combine cottage cheese, sour cream, onion and garlic salt.
Fold into potatoes.
Pour into a 2 1/2-quart casserole.

Bake in preheated oven for 1 hour.
