Sponge Cake
Sponge Cake is an moderately easy dinner. Made with 1 1/4 c. cake flour, 1 1/2 c. sugar, 1/2 tsp. baking powder, 6 egg whites and 6 egg yolks, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Sift together flour, only 1 cup of the sugar and baking powder.
Separate the eggs.
Combine egg whites, salt and cream of tartar; beat until soft mounds form, then add 1/2 cup sugar, a tablespoon at a time.
Beat until very stiff.
Beat egg yolks; combine with water, vanilla and lemon extract.
Add dry ingredients to egg yolk mixture.
Fold in egg white mixture.
Pour into ungreased tube pan.
Bake at 350Β° for 40 to 50 minutes. Cool; frost with Fluffy Icing.
