Spinach Soufflé
Spinach Soufflé is an easy dinner. Made with 4 eggs, 2 c. mayonnaise, 2 pkg. chopped spinach and 2 c. grated cheddar cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Beat eggs until fluffy.
Add mayonnaise.
Cook spinach until just separated.
Drain well.
Add cheese to spinach mix and season to taste.
Add spinach to egg mayonnaise.
Stir gently.
Bake at 325° for 45 minutes in greased dish.
You may substitute chopped broccoli.
Put together in A. M. but do not refrigerate.
Oh, so good, very fattening but worth every calorie.
