Spinach Salad
Spinach Salad is an moderately easy dinner. Made with 1 clove garlic, cut in large pieces, 1/2 tsp. salt, 1/2 c. salad oil, 1/4 c. cider vinegar and 3 tsp. lemon juice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Put garlic and salt in salad oil for 1 hour.
Mix together the cider vinegar and lemon juice.
Remove garlic clove from oil (if desired) and gradually add vinegar mixture to oil and beat until frothy.
Mix in 4 hard-boiled eggs to a pound of spinach.
Add generous amount of crisp, crumbled bacon.
Use fresh spinach only. Wash very thoroughly to eliminate sand and cut off stems.
One pound of spinach serves 8 to 10 people.
