Made with 1/2 lb. spinach, torn into bite size pieces, 1 c. endive, thinly cut, 1/2 small jicama, peeled and thinly sliced, 1/2 c. oil and lemon dressing (recipe follows) and 1 red onion, thinly sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
