Spinach Salad
Spinach Salad is an moderately easy dinner. Made with 1/2 lb. spinach, torn into bite size pieces, 1 c. endive, thinly cut, 1/2 small jicama, peeled and thinly sliced, 1/2 c. oil and lemon dressing (recipe follows) and 1 red onion, thinly sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Toss together spinach, endive, jicama and onion rings.
Blend dressing and soy sauce.
Pour over salad and toss.
Serve at once. Serves 4.
