Spinach Salad
Spinach Salad is an moderately easy dinner. Made with 1 lb. fresh spinach, tear out stems, 1 lb. bacon, cooked and crumbled, salt, pepper and garlic to taste, 3 hard-boiled eggs, sliced and 1 c. chopped green onions, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Fry bacon and crumble.
Pour off most of grease; leave just enough to stir-fry the other ingredients.
Put onions, mushrooms, eggs and spinach in with bacon; cover for 10 minutes and stir about every 2 minutes.
Put on low heat and add wine.
Cook another 10 minutes.
Serve warm.
