Spinach Salad
Spinach Salad is an moderately easy dinner. Made with 1 lb. fresh spinach, 1 apple, unpeeled, cored and cut into thin wedges, 2 tbsp. lemon juice, 3 green onions, sliced and 1 (2 oz.) pkg. sliced almonds, toasted, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Remove stems from spinach; wash leaves thoroughly and pat dry. Tear into bite sized pieces.
Toss apple wedges in lemon juice. Drain. Combine spinach, apple wedges, green onions and almonds; toss with bacon, if desired.
Combine oil and remaining ingredients in a jar.
Cover tightly and shake vigorously.
Before serving, pour dressing over spinach mixture; toss.
Yields 6 servings.
