Spinach Ricotta Pie
Spinach Ricotta Pie is an moderately easy dinner. Made with 1 deep-dish pie crust, 2 pkg. frozen chopped spinach, 1 small onion, minced (1/4 c.), 3 tbsp. butter or margarine and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cook spinach and drain.
Squeeze out liquid.
Saute onion in butter until transparent.
Stir in spinach, salt, nutmeg and pepper.
In a large bowl, combine Ricotta cheese, half and half, Parmesan and eggs.
Mix thoroughly.
Stir in spinach mixture. Pour into pastry shell.
Bake in oven at 350Β° for 50 minutes, or until custard is set and top is lightly browned.
