Spinach Rice Casserole
Spinach Rice Casserole is an moderately easy dinner. Made with 2 c. brown rice, cooked according to pkg. directions, 3 to 4 onions, 1 lb. fresh mushrooms, sliced, diced green pepper (as desired) and 1 pkg. cooked, frozen spinach, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook rice.
Saute onions in oil.
Wash and dry mushrooms; slice and fry rapidly in margarine.
Place cooked rice in a 13 x 9-inch dish.
Add sauteed onions, some diced green pepper, fried mushrooms and cooked spinach.
Add a little basil, salt and pepper and bake, covered, at 350° for 30 minutes.
Slice Monterey Jack (10 ounces) and place on top.
Bake 10 minutes at 300°.
