Spinach Filled Manicotti
Spinach Filled Manicotti is an moderately easy dinner. Made with 6 to 8 lasagna noodles, 1/2 or 1 box spinach (10 oz. pkg.), 2 c. ricotta, 1/4 c. mozzarella cheese and 1 1/2 tsp. oregano, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook lasagna noodles according to directions.
Cut drained noodles in half widthwise.
Cook and drain spinach.
Shred Mozzarella cheese.
Mix the cheeses, spinach, spices and egg (optional).
Put 2 to 3 tablespoons of mixture in the middle of each noodle and roll up.
Layer the dish with tomato sauce, roll-up, tomato sauce and more Mozzarella cheese (optional).
Bake 20 to 30 minutes at 350Β°.
Let set 5 minutes.
