Spinach Casserole
Spinach Casserole is an moderately easy dinner. Made with 3 pkg. frozen, chopped spinach, 1 c. chopped bacon, 1 c. chopped onions, 2 eggs and salt to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil spinach in salt-seasoned water in saucepan until completely thawed. Fry bacon and onions on medium heat in skillet. Crack eggs into large mixing bowl and add 4 slices of cheese, torn into small pieces. Mix thoroughly.
Add bacon and onions, fried, to mixture.
Drain boiled spinach and add to mixture; mix again. Salt and pepper to taste; mix thoroughly.
Pour into 1 1/2 quart casserole dish with lid.
Top with remaining cheese torn into pieces to cover top of casserole.
Cover; bake at 375Β° for 30 minutes.
Serve hot.
