Spiceland Hen House Eggplant(In Honor Of Stallion, "Nat'S Luck") is an moderately easy dinner. Made with 3 large eggplant, water (for cooking), 1/2 lb. bulk italian mild sausage, 3 green onions, chopped and 1 c. red onions, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Peel and dice eggplant; cook in salted water until tender. Drain well and set aside.
(It is really best to steam, rather than to boil the eggplant.) Saute green onions, red onions and celery in a skillet with small amount of cooking oil until transparent; set aside.
Saute sausage, in skillet, until well done; remove to paper towels; set aside.
Prepare stuffing mix according to package directions; set aside.
