Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1 3/4 c. long grain rice, 1 c. chopped onion, 1 clove garlic, minced, 1 (10 3/4 oz.) can condensed chicken broth and 1 1/3 c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cook rice, onion and garlic in hot oil for 5 to 7 minutes over medium heat, stirring frequently.
Carefully add broth, water, tomato sauce and pepper.
Bring to boiling.
Transfer the hot mixture to a 2-quart casserole.
Cover and bake in a 350Β° oven about 35 minutes or until rice is tender and liquid is absorbed. If desired, fluff with a fork before serving.
Goes well with poultry or fish.
