Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 2 1/2 c. cooked rice, 2 tbsp. butter or margarine, 1 small onion, chopped, 1/4 c. chopped green pepper and 2 c. canned or cooked tomatoes, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Heat 2 tablespoons butter margarine in skillet. Saute 1 chopped onion, 1/4 cup green pepper and 1/4 cup celery for 5 minutes.
1/2 cups cooked rice, 2 cups tomatoes, 1/2 teaspoon salt and F.G.
Pepper.
Bring boiling point. Simmer gently for 5 minutes.
Add 1/3 cup grated sharp cheese and serve.
Makes 4 servings.
