Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1 lb. bacon, 2 lb. hamburg, 1 diced green pepper, 1/2 c. diced onion and 2 large cans tomatoes, mashed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large skillet fry bacon until crisp.
Remove from pan. Saute onion in 3 tablespoons bacon grease.
Add green pepper and hamburg.
Cook until nearly done.
Add tomatoes and simmer until well done.
Add crumbled bacon.
Combine with rice.
Spoon into Pam sprayed casserole.
Bake at 300Β° for 1/2 to 3/4 hour.
Serves about 8.
