Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 3 tbsp. oil, 1 1/2 c. uncooked rice, 1/2 c. finely chopped onion, 1/4 c. finely chopped celery and 1/4 c. finely chopped green bell pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat oil in skillet and saute rice until golden brown.
Add vegetables and seasonings and saute 1 to 2 minutes more.
Add water or broth and tomato sauce.
Cover and simmer 15 minutes.
Remove from heat and let stand, covered, 3 to 4 minutes longer.
Fluff and serve.
Freezes very well in bag.
