Spanish Rice
Spanish Rice is an easy dinner. Made with 1 lb. bacon, 3 c. minute rice, 1 qt. canned tomatoes, 1/4 lb. velveeta cheese and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Cook bacon until crisp, then crumble or cut into small pieces before cooking and cook until well done.
Cook Minute rice according to directions on box.
Put tomatoes and 1/2 of cheese (cut in small pieces) in a 9 x 13-inch cake pan.
Add bacon pieces and rice.
Stir until well mixed.
Add rest of cheese, cut in small pieces, and salt and pepper to taste.
Bake at 350Β° for 45 minutes to 1 hour or until slightly browned on top.
