Spanish Fried Rice is an moderately easy dinner. Made with 1 c. long grain rice, 1 1/2 c. hot water, 6 slices bacon, 1 can condensed beef broth and 1 (8 oz.) can seasoned tomato sauce, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Soak rice in hot water for 1/2 hour; drain well.

Spread in big shallow pan to dry a little, about 1 hour.

Cook bacon until crisp; crumble and set aside.

Add rice to drippings and cook until rice is lightly browned.

Add crumbled bacon, beef broth, tomato sauce, green pepper, onion, garlic and cumin seed.

Cover; cook over low heat, stirring now and then, until rice is done and liquid absorbed, about 30 minutes (add extra water if needed).
