Southwestern Gratin Eggs is an moderately easy dinner. 👨‍🍳 Instructions

On the day before

Drain yogurt through cheesecloth and refrigerate.

Chop peppers and onions and refrigerate.

Grate cheese and refrigerate.

Use 9 x 13-inch casserole.

Spray with Pam.

Spread chopped bell peppers, onions and grated jalapeño cheese.

In separate bowl, beat eggs, yogurt, milk, salt and pepper.

Pour over peppers, onions and cheese mixture.

Sprinkle the one cup grated Cheddar cheese over entire casserole.

Bake at 350° for 40 minutes.

Let cool ten minutes before serving. Serves 8 to 10.
