Southwestern Corn Bread
Southwestern Corn Bread is an moderately easy dinner. Made with 1 (15 1/4 oz.) can whole kernel corn, drained, 1 c. flour, 1 c. cornmeal, 1/2 tsp. baking soda and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a food processor or blender, coarsely chop corn; set aside.
In a bowl, combine flour, cornmeal, baking soda and salt.
In a small bowl, combine egg, egg whites, milk and oil.
Stir into dry ingredients until moistened.
Add cheese, chilies and corn.
Pour into a 9-inch square baking dish coated with nonstick cooking spray.
Bake at 350Β° for 40 to 45 minutes or until a toothpick inserted near the center comes out clean.
