South Carolina Cornbread
South Carolina Cornbread is an moderately easy dinner. Made with 1 1/2 c. cornmeal (yellow), dash of sugar (if you prefer "yankee" cornbread), 1/2 tsp. soda, 1 1/2 tsp. salt and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix dry ingredients.
Beat eggs with buttermilk and shortening.
Add to dry ingredients and mix well.
Heat a 9-inch cast-iron skillet (put a little oil in skillet) in a 450Β° oven. Pour mix in skillet and bake for 12 to 15 minutes.
Take out and turn cornbread over and bake another 12 to 15 minutes.
