Sour Cream Potato Casserole
Sour Cream Potato Casserole is an moderately easy dinner. Made with 2/3 c. onion, chopped, 3 c. sliced, cooked potatoes, 4 tsp. grated american cheese, 2 eggs, beaten and 2 tbsp. oleo, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook onion in oleo; place 1/2 potatoes in buttered casserole and sprinkle with salt and pepper.
Add part of onion and grated cheese.
Mix sour cream, eggs, salt and pepper.
Pour half over potatoes.
Repeat.
Bake at 350Β° for 20 to 30 minutes.
