Sopa
Sopa is an moderately easy dinner. Made with 1 c. alphabet, star or fidello pasta, 2 tbsp. cooking oil, 1/4 c. diced onion, 1 clove crushed garlic or 1/4 tsp. garlic powder and 2 1/2 c. chicken broth or water plus 2 bouillon cubes, this recipe delivers authentic, satisfying flavors. In a 2-quart heavy pan, fry pasta in oil until lightly browned. Stir constantly.
Add onion and garlic until browned. Add tomato sauce, broth and seasonings.
Cover and bring to a boil.
Reduce heat and steam 20 to 25 minutes. Do not stir. Serve and top with grated Cheddar cheese.
Serves 3 to 4. Temperature: Medium heat.
