Soft Raisin Cookies
Soft Raisin Cookies is an impressive dinner. Made with 1 c. raisins, 3/4 c. water, 1/2 c. shortening, 1/2 tsp. cinnamon and 1/8 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Simmer raisins in water for 5 minutes.
Strain and save 1/4 cup of liquid.
Blend shortening, spices, sugar and vanilla.
Sift flour, baking powder, soda and salt and add to creamed mixture and mix well.
Add reserved liquid from raisins and then raisins.
Drop by teaspoonfuls on to cookie sheets 2 inches apart.
Bake at 400 degrees for 10 to 12 minutes.
