Sock-It-to-Me Salmon Patties
Sock-It-To-Me Salmon Patties is an moderately easy dinner. Made with 2 eggs, 1 tbsp. instant minced onion, 1 1/2 c. croutons, finely crushed, 1 (16 oz.) can salmon, drained, skinned, boned and flaked and 1/3 c. vegetable oil, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In large mixing bowl, thoroughly beat eggs.
Stir in onion, croutons and salmon.
Stir well to blend.
Divide mixture into 4 rounded patties.
Heat oil in skillet.
Brown patties on both sides.
Heat mushroom soup in small saucepan.
Add peas and butter; heat until butter melts, stirring to blend.
To serve, place patties on platter; spoon soup mixture over patties.
Makes 4 servings.
