Smothered Chicken
Smothered Chicken is an moderately easy dinner. Made with 1/3 c. flour, 1 tsp. paprika, salt and pepper to taste, 1 1/2 to 3 lb. chicken, cut up or 4 boneless chicken breasts and 4 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Combine flour, salt, pepper and paprika.
Coat chicken with flour mixture.
Melt margarine in heavy skillet.
Brown chicken on both sides.
Remove from heat.
Brown remaining flour mixture in margarine until golden brown, stirring constantly.
Slowly stir in water to make gravy.
Return chicken to skillet and add onions.
Cover and cook on low heat until done, about 25 or 30 minutes.
