Smoky Sausage 'n Rice
Smoky Sausage 'N Rice is an moderately easy dinner. Made with 1 (10 to 12 oz.) pkg. smoked sausage links, 1/4 c. chopped green peppers, 2 tbsp. minced pimento, 1/4 tsp. black pepper and 1 (15 oz.) can black-eyed peas, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cut sausage into bite size pieces.
Saute in oil.
Stir in onions and pepper.
Continue to saute until tender.
Stir in water, pimento, broth and black pepper. Bring to boil.
Stir in rice and peas.
Bring back to boil.
Cover.
Lower heat and simmer about 20 minutes. Makes six 1 cup servings.
