Skillet Cookies
Skillet Cookies is an moderately easy dinner. Made with 1 stick margarine (1/2 c.), 1 c. sugar, 1 c. chopped dates, 1 egg, slightly beaten and 2 c. rice krispies, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a skillet, melt margarine.
Add sugar, dates and egg; mix well.
Bring to a boil on medium heat and boil about 4 minutes, stirring frequently.
Remove from heat and add Rice Krispies, pecans and vanilla.
Mix and set aside to cool.
Roll into balls and roll in coconut.
